The 2021 Nebbiolo boasts a complex aromatic profile of orange blossom, orange peel, clove, and star anise. On the palate, it offers flavours of sour cherry, blackberry, bay leaf, soy, orange bitters and thyme. The wine's mouthfeel is characterised by intense, firm tannins and lively, mouth-coating acidity.
From a single vineyard in Macclesfield, grapes were hand-picked and underwent fermentation in open fermenters with hand plunging, including 50% whole bunches. Following this, the wine matured in old French hogsheads and rested on lees for 14 months. The 2021 vintage was aged for an additional 6 months in the bottle before release.
